It needs to be resistant to drought, insects need to find it disgusting, it needs to be within a certain height to make it easy to harvest, easy to release from the stalk/covering, have more grains on each whatever they're called etc. This led us to look for ancient grains to bake with. Now I'm not diehard organic, etc. so I just use the store brand (100% apple juice). It tastes great!<br />Last I made applesauce I just employed my girls to help peel & core the apples, cooked 'em & blended them in the blender. Most goodies I made get eaten up rather quickly in this house! :) The German pancakes take so few ingredients and go together so fast, I don't think I would consider it a time-savings to make it ahead and freeze. <br /><br />Since you mentioned those in the same question, I'm now thinking that it would probably be delicious to add some chopped apples, cinnamon, nutmeg to the German pancake recipe.
