I know that lots of people enjoy sweet potato items for the holidays. This is a great demo video showing how to use the convenience of freeze-dried foods to make a classic sweet potato pie! Healthier Sweet Potato Pie
Base:
1 1/2 cups Thrive Sweet Potatoes (rehydrated with water)
1/3 cup coconut sugar
half teaspoon sea salt
2 tablespoons Thrive whole egg powder + 4 tablespoons water
Topping:
1/3 cup coconut sugar
half cup whole wheat flour
half cup chopped pecans
quarter-cup melted butter
quarter-cup unsweetened shredded coconut
Combine the base ingredients with mixer until nicely mixed and fluffy. Pour into greased 8x8 casserole dish.
Mix topping ingredients together and sprinkle evenly over the base.
Bake at 350 for 25 minutes or until lightly browned on top.
